Why Make Gummies?
Gummies are the most popular edible format for good reason: precise dosing (each gummy is identical), discreet, portable, long shelf life, and they taste good. Making them at home lets you control the dose exactly and costs a fraction of dispensary prices.
Equipment & Ingredients
- Infused coconut oil (pre-made — see our Coconut Oil Guide)
- Silicone gummy molds (standard size: ~2ml per cavity)
- 1 packet (7g) unflavored gelatin OR 2 packets for firmer gummies
- 1 box flavored gelatin (Jell-O or similar) — any flavor
- ½ cup fruit juice (match the flavor)
- 1-2 tablespoons infused coconut oil
- Saucepan and whisk
- Dropper or small measuring spoon for filling molds
Step 1: Prepare Your Infused Oil
You need pre-made infused coconut oil. If you haven't made it yet, follow our coconut oil infusion guide. Use the BatchCraft Calculator to determine how much oil to use per batch to hit your target dose per gummy.
If your oil is 50mg/tablespoon and you're making 30 gummies, 1 tablespoon gives ~1.7mg per gummy. Use 2 tablespoons for ~3.3mg each. Plan your dose before you start cooking.
Step 2: Make the Gummies
- 1Pour ½ cup fruit juice into a small saucepan over low heat. Do not boil.
- 2Sprinkle unflavored gelatin over the juice. Let it bloom (absorb liquid) for 2 minutes.
- 3Whisk gently until gelatin dissolves completely. Keep heat low — do not boil.
- 4Add flavored gelatin packet. Whisk until fully dissolved, about 2 minutes.
- 5Remove from heat. Let cool for 2 minutes (gelatin sets above 60°C, so don't wait too long).
- 6Add infused coconut oil. Whisk vigorously for 60 seconds to emulsify evenly.
- 7If oil separates, add ½ teaspoon sunflower lecithin and whisk again.
- 8Use a dropper or small spoon to fill silicone molds quickly before the mixture sets.
- 9Refrigerate for 2+ hours until completely firm.
- 10Pop gummies from molds. Store in an airtight container in the fridge.
Demolding & Storage
Properly made gummies last 2-3 weeks in the fridge and 3+ months in the freezer. For longer shelf life, toss them in a light coating of cornstarch or citric acid to prevent sticking.
| Storage | Duration | Notes |
|---|---|---|
| Refrigerator | 2-3 weeks | Airtight container, parchment between layers |
| Freezer | 3-6 months | Thaw in fridge, not at room temp |
| Room temp | 2-3 days max | Gelatin gummies melt in heat |
Dosing Your Gummies
The key to consistent dosing is thorough mixing. If the oil isn't fully emulsified into the gelatin mixture, some gummies will be stronger than others. Whisk vigorously and consider adding lecithin.
If oil pools on the surface of the mixture, your gummies will have wildly inconsistent doses. Keep whisking until no oil is visible on the surface. Lecithin acts as an emulsifier to keep the oil distributed.
Troubleshooting
- Gummies too soft? → Use more unflavored gelatin (2 packets instead of 1)
- Gummies won't set? → Refrigerate longer, or your gelatin may have been boiled (destroys gelling)
- Oil separating? → Add ½ tsp sunflower lecithin as emulsifier, whisk more
- Stuck in molds? → Freeze for 30 min then flex the silicone to pop them out
- Taste too herbal? → Use stronger-flavored juice (tart cherry, grape) or add citric acid for sour coating
