What Is the Mason Jar Method?
The mason jar oven method is a simple technique where you seal your source material in a canning-grade mason jar and bake it in the oven. The sealed jar traps volatile compounds and odors, making this a much more discreet alternative to spreading material on a baking sheet. It is one of the most popular low-tech approaches for odor-conscious home cooks.
This method works for decarboxylation only. For infusion, you will need to use a separate method (stovetop, slow cooker, sous vide, etc.) after decarbing. The mason jar is essentially a cheap, reusable, sealed decarb chamber.
Why Use a Mason Jar?

Step-by-Step: Mason Jar Decarb
- 1Preheat your oven to 240°F (115°C). Place an oven thermometer inside to verify the actual temperature.
- 2Break your source material into small, pea-sized pieces. Do not grind to a fine powder.
- 3Place the material into a clean, dry wide-mouth mason jar. Fill no more than 3/4 full to allow some air space.
- 4Screw the lid on finger-tight. This means turn until you feel resistance, then stop. Do NOT fully torque the lid. Finger-tight allows a tiny amount of pressure to escape, preventing the jar from pressurizing dangerously.
- 5Place the jar on its side on the oven rack (or on a baking sheet for stability). Laying it on its side increases the surface area of material exposed to heat.
- 6Bake for 50 minutes. The slightly longer time compared to the open-tray method (40 min) compensates for the glass insulating the material slightly.
- 7After 50 minutes, turn off the oven but leave the jar inside with the door closed for another 10 minutes. This allows a slow cool-down.
- 8Remove the jar using oven mitts. Let it cool completely (at least 15–20 minutes) before opening. The trapped compounds will reabsorb into the material as it cools.
NEVER fully seal the mason jar lid before putting it in the oven. A fully sealed jar can build up pressure as gases expand during heating and may shatter. Finger-tight allows the seal to "burp" slightly, preventing dangerous pressure buildup while still trapping the majority of odors and volatile compounds.

The mason jar method requires slightly longer times than the open tray method because glass insulates the material from the oven’s radiant heat. Add approximately 10 minutes to standard decarb times when using a jar.
Jar Selection & Safety
Not all glass jars are safe for oven use. Use only proper canning-grade mason jars (Ball, Kerr, or equivalent brands). These are made from tempered soda-lime glass designed to withstand thermal cycling.
- Use wide-mouth jars for easier filling and cleaning
- Pint-sized (16 oz) jars work best for 7–14g of material
- Quart-sized (32 oz) jars are good for 14–28g batches
- Inspect jars for cracks, chips, or stress marks before each use
- Do NOT use decorative jars, recycled food jars, or jars with painted surfaces
- Replace lids and bands if they show signs of rust or warping
Never place a hot jar on a cold surface (granite counter, cold water) or put a cold jar into a hot oven. The sudden temperature change can cause the glass to crack or shatter. Always start with the jar in the cold oven and let it preheat together, or place the hot jar on a towel or wooden cutting board.
After Decarbing: Next Steps
Once your material is decarbed in the jar, you can proceed to any infusion method. Some people even do a mason jar infusion: add carrier fat directly to the jar with the decarbed material, reseal finger-tight, and place the jar in a slow cooker filled with water for 4–6 hours. This keeps the entire process in one container with minimal odor.
For the most discreet, lowest-mess approach: decarb in the jar, add carrier fat to the same jar, then infuse the jar in a slow cooker water bath. You only dirty one jar and one slow cooker. Strain at the end.
Efficiency & Expected Results
The mason jar method typically achieves 85–92% decarboxylation efficiency when done at 240°F for 50 minutes. This is slightly lower than a dedicated decarb device (95–98%) but higher than many standard oven approaches because the sealed jar creates a more controlled micro-environment and prevents loss of volatile compounds.
Use the "Standard" efficiency preset (85% decarb) when using the mason jar oven method. If you are using a verified oven thermometer and following the time guidelines precisely, you can consider the "Optimistic" preset.
